Hi Cupcakes and Kale Chips Readers! I’m Susan from The Girl In The Little Red Kitchen and I’m so thrilled to be guest posting as part of Brianne’s Twelve Guests Posts & Roundups of Christmas today! Brianne and I have had the opportunity to meet a few times in person and she is absolutely amazing.

Since we are more than halfway through the month and I’m sure you’ve been seeing recipe upon recipe of chocolate, cookies and cakes, I thought we could take a break and look at a different meal.

How about breakfast?

It is the most important meal of the day and you should cook up a hearty breakfast Christmas morning in order to tackle all the gifts sitting under your Christmas tree!

Now you might have your traditional breakfast ready to go that you make every year but how about we change things up a bit? How does making something that could technically be made in advance sound? How about a breakfast topped with brown sugar and cinnamon sautéed apples?

Do I have your attention now? I think I most certainly do.

We’ve all had apple cider donuts, at least I hope you have! So I figured, why not take that delicious apple cider flavor and toss it into a waffle? I love the subtle apple flavor you get from the cider in the waffle but it really gets enhanced once you top it with the sautéed chopped apples. As I mentioned, this breakfast is totally a plan ahead meal too. The waffles are delicious as soon as they come out of the waffle maker but here’s a secret they get even better the next day. I took my leftover waffles, popped them into my toaster oven and the toasty awesomeness that happened on my plate couldn’t be beat.

The Best Apple Cider Waffles

An easy recipe for homemade waffles with a subtle apple flavor, enhanced with sautéed chopped apples on top! A hearty and easy breakfast idea that the family will love to wake up to.
Prep: 5 minutes
Cook: 30 minutes
Total: 35 minutes
Servings: 6 servings

Ingredients

For the waffles:

  • cups all-purpose flour (unbleached)
  • 2 tablespoons light brown sugar
  • teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon freshly grated nutmeg
  • ½ teaspoon salt
  • ¼ teaspoon ground clove
  • 2 tablespoons unsalted butter melted
  • 2 large eggs room temperature
  • ¼ cup whole milk
  • ¾ cup local apple cider

For the apple topping:

  • 3 medium apples cored and chopped in a ½ inch dice
  • ¼ cup apple cider
  • ¼ cup light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • pinch of salt
  • 3 tablespoons unsalted butter

Instructions

  • In a medium bowl combine the flour, sugar, baking powder, cinnamon, nutmeg, salt and clove.
  • In a small bowl combine the milk, eggs and melted butter.
  • Make a well in the dry ingredients and pour in the milk mixture and apple cider. Mix until all the dry ingredients are incorporated, it’s fine if the batter is lumpy.
  • Heat your waffle iron according to it’s instructions, grease and cook the waffles accordingly. Keep warm on a baking sheet in a 250°F oven.
  • If making ahead of time, let the waffles cool and store in an airtight container in your refrigerator. Reheat in your toaster oven until toasty.
  • Make the apple topping right before serving the waffles.
  • In a medium saucepan over medium heat combine the chopped apples, apple cider, sugar, cinnamon, nutmeg, salt and butter.
  • Cook until the the apples have softened and formed a syrup in the pan. About 10-15 minutes.
  • Serve the apples on top of your waffles with maple syrup if you choose.
