Banana & Avocado Popsicles – Guest Post from The NY Melrose Family

There’s nothing that screams summer more than fun Summer Desserts like popsicles. Over at The NY Melrose Family, my girls would eat popsicles for breakfast, lunch and dinner if I would let them. I’m not that “cool” though. My girls are 4 and 1 so I feel it’s important to give them sweets that are good for them, which is why these Banana & Avocado Popsicles definitely make a regular appearance in our house.

These popsicles are perfect for bananas or avocados that are almost too ripe. We usually don’t have a ton of those lying around because both of my girls love bananas and avocados. I’m not exactly sure where their love of them stems from. It might have something to do with the fact that those were two of the first “real foods” I gave them as a baby and you’ll love anything “real” at that point. I find it funny though because I dislike both of them. Although, I liked these popsicles because the two combined with yogurt was the perfect flavor combination.

I used my popsicle molds from the dollar section of Target, but any molds would work. I actually love the look of using a small paper cup with a wooden stick. The size of the popsicle is usually better for my youngest as well. With my molds, I found that I ended up with some air bubbles because the mixture is a little thicker. The girls didn’t mind the bubbles though. My youngest actually found the bubbles quite interesting and spent more time playing with them then eating her popsicle.

Here’s quick tip for you if you’re using the plastic popsicle molds like I did. The best way to get them out is not to simply pull the stick and assume that they will slide out. Yep, I learned that lesson the hard way. The best way to get them out is to run the mold under warm water while pushing the popsicle out. The best way to picture this is to think of milking a cow. You’ll need to start on the opposite end of the handle and push down towards the handle.

Banana & Avocado Popsicles
 
A healthy popsicle that the kids will love and devour.
Author:
Serves: 4
Ingredients
  • 1 banana
  • 1 avocado
  • ½ cup Greek yogurt
Instructions
  1. In a food processor combine all ingredients and mix until well blended.
  2. Place the mixture into popsicle molds of your choice.
  3. Freeze for at least 6 hours before removing them from the mold.
