Peanut Butter Butterscotch Popcorn – Guest Post from The Doctorate Housewife

Hi, I’m Jessi and I blog over at Doctorate Housewife. I’m no Martha Stewart, just a quirky PhD that accidentally became a housewife. I blog about my experiments in baking, DIY, and fitness. Then there’s the occasional insert of social science research – once a geek always a geek I guess =p.

I’m really excited to be sharing this recipe with you today as Brianne enjoys her maternity leave. A big congratulations to her and her family. I love reading this blog and I can’t believe I’m getting to post on it today. Here’s a recipe that I hope is right up your street. It’s simple, tasty, and good for any occasion.

When I was a kid my grandma would bring us craker-jack boxes – you know the ones with the little toy or joke inside. It wasn’t every time we saw her, but every once in awhile she’d pull the boxes out of her purse and I’d know we were in for a treat. This isn’t cracker-jack. This is caramel popcorn with peanut butter. And as I’m sure you know, peanut butter makes everything better. Here it is – Hope you enjoy =)

Here’s what you need:

  • butterscotch

    • 1/2 stick butter
    • 1/2 cup light brown sugar
    • 1/2 cup cream
    • pinch of salt
    • splash of vanilla
  • 1/4 cup peanut butter (I use homemade – like this one)
  • 1/4 popcorn kernels (unpopped)

Here’s what you do:

  1. Pop the popcorn. I like to air pop mine, but microwave or oil popped is good too.popcorn
  2. Make the butterscotch.
  3. Making Butterscotch
    • Melt butter over medium high heat in heavy bottomed sauce pan.
    • Stir in brown sugar until smooth and melted (2-3min).
    • Pour the cream and mix it in.
    • Reduce heat and let simmer for 10-12 minutes.
    • Remove from heat. Add vanilla and salt.
  4. Add the peanut butter to the warm butterscotch and mix until smooth.peanut butter butterscotch
  5. Add the butterscotch mixture to the popcorn and mix till all kernels are coated.
  6. Now the choice is yours – eat it all right away (let’s call this the preferable choice :-), or lay it out on a cookie sheet, let dry, and enjoy it later.

Peanut Butter Butterscotch Popcorn is caramel popcorn with peanut butter - because peanut butter makes everything better!
Recipe type: Snack
