Grilled flank steak is even more juicy and mouthwatering when you let it soak in an easy balsamic marinade made with sundried tomatoes and rosemary. Just stir together this 5-ingredient marinade recipe, then fire up the grill to enjoy this lean and flavorful cut of beef as the centerpiece to many family dinners.
Back when The Hubby and I started dating, he had been doing the Atkins diet. I pretty much destroyed that, with my love for ice cream, and his love for doing anything to make me happy.
One night he wanted to make dinner for me. He chose a lasagna recipe that he had made before – the heck with Atkins, he wanted to impress me. And I was impressed… several hours later.
You see, the flame in his old oven had a tendency to blow out if you shut the door for too fast. But we didn’t realize this until 45 minutes into the 1 hour cooking time. As far as I can remember, it was delicious, but maybe just because I was STARVING.
Honestly, though, I was more impressed with his grilling skills. The Hubby knows how to grill a steak. And flank steak is often our meat of choice.
Usually, we season it simply with coarse sea salt, pepper, and maybe some grill seasoning. But every once in a while, we like to mix it up a little, which I did with this simple marinade. After I provide the flavor, I turn it over to the Grill Master to work his magic.

Rosemary Balsamic Marinade for Grilled Flank Steak
A simple, 5-ingredient marinade is all it takes to add incredible flavor to a grilled steak! Don’t let grilling season get away without making this grilled steak recipe.
I wrote the balsamic marinade recipe to use with flank steak, but it would make a great marinade for London broil or other cuts of steak. I bet it would be great even with chicken or veggies. What You’ll Need
Pick up a flank steak from the store. Typically you’ll find these cuts of beef to be about 1 1/2 to 2 1/2 pounds, and this balsamic marinade recipe is plenty for that size steak. It never hurts to grill two so you can use the leftovers on a steak salad, and it’s simple to double the marinade.
- Balsamic vinegar
- Sundried tomatoes – preferable the kind packed in oil. You can use the dried, but they will take longer to hydrate and infuse their favorite. Plus the oil is so flavorful that it can be used as the olive oil for the marinade
- Olive oil – or, for even more flavor, use the oil from the jar of sun dried tomatoes.
- Rosemary – preferably fresh, but dried works as well.
- Garlic
How long should you marinate flank steak?
Cuts of beef like flank steak need quite a while to marinate; at least 12 hours, and preferably overnight. That time in the marinade will break down the fibers in the meat. As a result, you’ll end up with grilled flank steak that practically melts in your mouth!
How to grill flank steak
- Preheat your grill to high heat.
- Remove the steak from the marinade and season both sides liberally with coarse sea salt and freshly ground pepper.
- Grill the flank steak on direct, high heat for 4-7 minutes a side, depending on thickness and desired doneness. For a 2 lb flank steak, about 5-6 minutes a side produces a nice, medium-rare steak.
For the most tender steak, let it rest for several minutes after taking off the grill, then slice thinly against the grain.

Grilled Flank Steak with Balsamic Marinade
Ingredients
- 1 flank steak (about 1.5-2.5 lbs)
- 1/4 cup balsamic vinegar
- 3 sun dried tomatoes preferably packed in oil, finely chopped
- 2 Tablespoons of the oil from the sun dried tomatoes or 2 Tablespoons olive oil
- 1 teaspoon chopped fresh rosemary or 1/2 teaspoon dried rosemary
- 1 garlic clove, minced or crushed
- coarse sea salt
- freshly ground pepper
Instructions
- Combine balsamic vinegar, tomatoes, oil, rosemary, and garlic in a large plastic bag or shallow dish.
- Add the steak and marinate for at least an hour (the longer, the better)
- Preheat your grill to high heat.
- Remove the steak from the marinade and season both sides liberally with coarse sea salt and freshly ground pepper.
- Grill the flank steak on direct, high heat for 4-7 minutes a side, depending on thickness and desired doneness. For a 2 lb flank steak, about 5-6 minutes a side produce a nice, medium-rare steak.
- Slice thinly against the grain and serve.

Haha – my hubby loves grilled steak so much that he;ll go out and grill in the dead of winter. Actually, my friend used to live in Suracuse, and her husband dug a path to the grill every winter.
